Recipe: Tomato & Tofu Salad

Ingredients

Red & yellow cherry tomatoes

Sherry vinegar

Soy sauce

Sugar

Sesame oil

Salt

Silken tofu

Rice vinegar

Goma paste

Crispy rice balls (sesame seeds are fine)

Basil cress

Shiso cress

 

Method

  1. Make the marinade using the sherry vinegar, soy, sugar, sesame oil & salt in a bowl.
  2. Blanche and peel the tomatoes, then marinade. Drain after 30 minutes.
  3. Blend the tofu, rice vinegar, soy and goma in a separate bowl.
  4. Plate and enjoy!
